Over the next five years, he worked his way up through T-BONES, as a food server, dining room manager, head kitchen manager, and finally to general manager. Tom was then brought on as a founding partner of Cactus Jack’s, which opened in 1995. He held the store’s general manager position until 1998, when he took on additional responsibilities as the director of marketing and subsequently director of operations for T-BONES, CJ's, & Cactus Jack’s.

Most recently he has broadened his innovative business approach by opening T-BONES Meats, Sweets & Catering, a commissary, and creating Great NH Restaurants’ own non-profit, www.FEEDNH.org. In the late 1970's, Mark started as a line cook with TGI Fridays in Boston. He managed TGIF for several years and came to the conclusion that working for a corporate chain was a recipe of corporate nonsense, way too impersonal and uncaring.
Shortly after, he teamed up with two others to open T-BONES Great American Eatery and Drinkery in Salem, NH, in 1984. It has remained a monumental success.
